I don't own a Montana, but if one works like any of my handhelds, you should be able to leave everything enabled.  Personally I'd disable the Topo US 100k, because most of the maps on this site are 24k.  I'd also have a routable map on my GPSr.  Either City Navigator, or a free one from http://garmin.openstreetmap.nl/ .

Standard datum for Garmin maps is WGS84.

For an ATV environment, I'd suspect you'd want a Zumo. but somebody here who uses one would have to confirm that the maps you want to use will work with it.  Garmin won't be helpful regarding third party maps.
