Nevermind guys... I found it... Tools/Control Center/Options/Classify Unclassified Area Features As/

NHDWaterbody.shp = Lake
NHDArea.shp = Major River
NHDFlowline.shp = Minor River

Now all 3 layers are blue and i am happy

The catch to this is that some of the flowlines aren't rivers; some are washes; some are streams that don't always exist.  That is what the files I posted for PostGIS do; it takes all that into account.
